In a pressure cooker it will made so easy. So, we take pressure cooker on that we add, Cinnamon, Cloves, green cardamom, Cumin, Coriander seed. Sauté few seconds until aromatic. Add 3-4 drops of oil and then we add Makhana (Fox nut), peeled off potatoes, peeled off carrots, 2 Onions, and French beans and Cashews. Add salt and mix it.
Add 1 cup of water. In medium flame make 1 whistle and turn off the gas.
When we open the pressure cooker then we see the veggies get cooked by 60-70% Rest we will cook later.
We chopped the veggies (Carrot, potato & beans) and shallow fried.
We will take out the veggies from cooker and rest spices we add in mixture grinder along with that water, onion & tomatoes and grind it. ((When spices turn into normal temperature)
For curry base- We take a wok add Oil and add parboiled veggies and then we add peas as well. When it will get shallow fried then we fry paneer as well and set aside.
In a same wok we add Oil and a bay leaf. Add ginger garlic paste and then we all then grinded puree (Onion tomatoes) and adjust the heat in medium to low flame.
Fry the prepared gravy well in high to medium flame for 5-7 mins.
Now we add all vegies and mix it well. Add garam masala, salt to taste. Add approx. 1 cup of hot water (do not add cold water otherwise cooking process will get slow and it will take time to cook).
Wait for 3-4 mins and then switch off the flame. Now we add fresh cream milk and freshly chopped coriander and the mix veg is ready to serve.
Milk Paratha- here we take 2 cup of wheat flour, Milk powder, Salt, Sugar, Milk, Ghee.
Mix it well the we knead a dough with the help of milk (room temperature milk).
Make a medium size ball. 8 to 10 balls made in 2 cup of flour. Then take a one ball and rolling out the chapati. Add some ghee or oil then again fold it as we shown on the video.
Now we take griddle (flat tawa) and cook it from both the side. Add ghee or oil and now your paratha is ready to serve.
